Google product category (google_product_category) is a product feed attribute that assigns an item to a value from Google's predefined product taxonomy. Google auto-assigns one to every product in Merchant Center, and you submit this attribute to override that classification for Shopping ads and free listings.
Every item you upload to Merchant Center is placed into Google’s taxonomy automatically, based on the product data you submit. The google_product_category attribute is how you override that guess when Google lands your product in the wrong branch.
ID or path, never both
You submit one value per product, either the numeric ID or the full path:

Not both. The field is not repeatable, so it is one category per product. In XML feeds, encode & as & and > as >. If the taxonomy is not available in your language, use the English values or the numeric ID.
Do not confuse it with product_type. That attribute is your own freeform classification used for bidding and reporting, with no fixed list. google_product_category must be a supported value from Google’s taxonomy. You can put the same string in both, as long as it is a real Google category.
Why bother if Google auto-assigns? Because auto-assignment is unreliable for niche or handmade items, and some categories carry extra required attributes. Apparel, for example, requires color, size, gender, and age_group. Land in the wrong branch and you either get disapproved for missing fields or get shown to the wrong shoppers.

Your product feed is a ranking surface, not just an ad input. The category a product sits in decides which Shopping and free-listing queries it is eligible for, so a wrong auto-assignment quietly caps eligibility across the whole catalog.
