Discontinued product SEO is how you handle the URL of a product you will never sell again: keep it live marked as discontinued, 301 redirect to the closest live equivalent, or return 404/410 so engines drop it. The right call depends on the page's links, traffic, and whether a real replacement exists.

Keep, redirect, or remove
Keep it live when the page still ranks or pulls search traffic. Mark availability as schema.org/Discontinued (a value Google supports in product structured data), say plainly that it is no longer sold, and surface replacements or related items so the visit is not a dead end.
301 redirect when a genuine equivalent exists, like a newer model or a near-identical SKU. Point it at that product or its parent category, not a blanket redirect to the homepage. Google reads irrelevant redirects as soft 404s, so they pass no value and clutter Search Console.
Remove it (404 or 410) when nothing replaces it and the URL has no links or traffic. Google drops the page from its index either way. John Mueller has said the processing difference between 404 and 410 is minimal, so do not overthink it. A 410 Gone just states more explicitly that the removal is permanent.
One caution: out-of-stock is not the same as discontinued. If a product is coming back, keep it live and marked out of stock. Do not 404 inventory you plan to restock.
